One of my clients recently gave me this quinoa side dish recipe. Quinoa is a high protein seed that cooks up like a grain.  Although I enjoy it alone, I prefer quinoa mixed with other grains or put together with vegetables as a side dish or warm salad.

I love it for it’s simplicity along with the fact that it is tasty – an excellent combination in my kitchen!

Quinoa and Pepper Saute

Ingredients

  • 1 red bell pepper
  • ½ c. red onion chopped
  • ¼ tsp. smoked paprika
  • 1 tsp. olive oil
  • 2 c. baby spinach
  • 1 c. cooked quinoa
  • 1 Tbsp. Parmesan cheese grated (optional)
  • 2 tsp. fresh parsley chopped

Instructions

  1. Cook quinoa according to package instructions.

  2. Saute red pepper, red onion and paprika in olive oil until vegetables are soft, about 5 minutes.


  3. Add spinach and saute until spinach wilts.

  4. Serve vegetable mixture over cooked quinoa.  Sprinkle with Parmesan cheese and fresh parsley.
