A fellow Ayurveda colleague of mine, Bryn, shared this recipe with me years ago when I taught in an Ayurveda school in Wisconsin.

It is my go-to recipe when I need to take a snack item to a social gathering.  It is also great for a kids snack or to have as a sweet treat at the end of a meal.

Depending on your taste, you can decrease the amount of maple syrup as the dates are naturally quite sweet.

The nuts, seeds and ghee provide good quality fats that are nourishing to vata.  The coconut helps cool pitta.  It is too sweet and heavy to be balancing for kapha, though enjoyed in moderation it would overly aggravate kapha.

Sesame Seed Bars

A snack full of healthy fats with seeds, nuts and ghee.

Ingredients

  • 4 cup sesame seeds
  • ¾ cup cashews well chopped
  • 1 cup coconut
  • 4 dates chopped well
  • ¼ cup ghee melted
  • 1 tsp. vanilla
  • Sea salt to taste
  • 1 cup maple syrup

Instructions

  1. Mix together all the ingredients well. 

  2. Oil parchment paper and press mix onto paper. 

  3. Bake 10-15 minutes in a preheated 350 degree oven.

  4. Cool and cut or break into pieces.
