Using vegetables as a base for a dressing instead of oil, is one way to not only bring in more of the nutrient-dense vegetables, but also to lower the heavy Kapha quality that comes with oilier substances.
You can use any fresh herb and spices to create the taste you prefer or the dish you’re using it with.
Zucchini Herb Sauce
A light and tasty dressing or sauce for everything from grains, pastas, salads and vegetables.
- 1 medium zucchini thick diced
- 1/4 - 1/2 cup fresh herbs parsley, cilantro, dill, combo
- 1/2 lime or lemon juiced
- 1/3 - 1/2 cup water
- 1/2 tsp Soma or sea salt
- 1/4 tsp fresh ground black pepper
- 1-2 tsp spices of your choice I prefer Italian spices like basil, dill, oregano
Put all ingredients in a strong blender or food processor and blend. You can increase water depending on your texture preference.
Ideally use fresh that day or the next.
